Want to eat something creamy but maintain your calories? No problem! Just try some Avocado on a toasted bread and you are good to go. It is extremely filling and tasty to your pallet. Have fun while you eat it!
Serves 4 toasts
Ingredients
For Avocado and toast
4 slices wheat bread (you could also use a sourdough bread)
4 tsp extra virgin olive oil
1 Avocado (ripe)
1 ½ Garlic cloves (finely chopped)
½ Tsp Coriander (finely chopped)
¼ tsp Lemon Juice
Pepper as per taste
Salt to taste
For tomato salsa
1 Tomato (medium, de- seeded and finely chopped)
1 Onion (small, finely chopped)
½ Tsp Parsley(finely chopped)
1 tsp Green chilli (de – seeded and finely chopped)
¼ tsp Lemon Juice
1tsp extra virgin olive oil
Pepper as per taste
Salt to taste
Method
For the avocado
- Cut the Avocado from the center and get rid of the seed. Scoop out the fruit and mash it well in a bowl.
- Add garlic and coriander and season with some salt and pepper as per your taste.
- Finally add in the lemon juice and mix this well.
For the salsa
- Add tomato, onion, parsley and green chilli to a bowl.
- Now season with some salt and pepper as per your taste.
- Finally add in the olive oil and lemon juice and mix this well.
To assemble
- Heat oil in a frying pan and toast the bread on both sides.
- Spread the avocado on toast.
- Top this with the prepared salsa.
- Garnish with some coriander and serve fresh.
