Avocado on toast..with a tangy tomato salsa!

Want to eat something creamy but maintain your calories? No problem! Just try some Avocado on a toasted bread and you are good to go. It is extremely filling and tasty to your pallet. Have fun while you eat it!

Serves 4 toasts

Ingredients 

For Avocado and toast

4 slices wheat bread (you could also use a sourdough bread)

4 tsp extra virgin olive oil

1 Avocado (ripe)

1 ½ Garlic cloves (finely chopped)

½ Tsp Coriander (finely chopped)

¼ tsp Lemon Juice

Pepper as per taste

Salt to taste

For tomato salsa

1 Tomato (medium, de- seeded and finely chopped)

1 Onion (small, finely chopped)

½ Tsp Parsley(finely chopped)

1 tsp Green chilli (de – seeded and finely chopped)

¼ tsp Lemon Juice 

1tsp extra virgin olive oil

Pepper as per taste

Salt to taste

Method

For the avocado

  1. Cut the Avocado from the center and get rid of the seed. Scoop out the fruit and mash it well in a bowl.
  2. Add garlic and coriander and season with some salt and pepper as per your taste.
  3. Finally add in the lemon juice and mix this well.

For the salsa

  1. Add tomato, onion, parsley and green chilli to a bowl.
  2. Now season with some salt and pepper as per your taste. 
  3. Finally add in the olive oil and lemon juice and mix this well.

To assemble

  1. Heat oil in a frying pan and toast the bread on both sides.
  2. Spread the avocado on toast.
  3. Top this with the prepared salsa.
  4. Garnish with some coriander and serve fresh.
