Chocolate Pancakes

 Inviting friends over for breakfast or brunch? Pancakes are the best dish to serve on such occasions. They are fluffy, moist and melt in your mouth. Serve them with nutella, caramel, sprinklers or nuts. They are versatile and can be customized to suit your taste. This recipe will give you extremely fluffy pancakes and they melt in your mouth too!

Serves 3-4 pancakes

Ingredients:

For the pancakes:

1/2 cup All purpose flour (plain refined flour)

1 ½ tbsp unsweetened Cocoa powder

1/4 cup Powdered Sugar (adjust to taste)

1/2 tsp Instant espresso powder

A pinch of Salt

1/2 tsp Baking Powder

1/4 tsp Baking Soda

1/8 cup Vegetable Oil or Melted Butter

1/3 cup Buttermilk (check notes for substitutes)

For the Nutella sauce:

 3tbsp Milk

  3tbsp Nutella 

  1 microwave safe bowl

Method:

For the pancake:

1. In a bowl, mix all the wet ingredients together. 

2.  Now sieve in sugar, baking powder, baking soda, salt and cocoa powder. Mix this a little.

3. Now add the flour little by little while you mix the batter thoroughly. Do not over mix. The batter should be of pouring consistency and should not have any lumps. 

4. Melt 1/2 teaspoon of butter on a pan. Pour a ladle full of the batter in the center of the pan.

5. Let it cook  for 3-4 minutes on medium heat. The side is cooked when you see bubbles all over the top of the pancake.

6. Now flip the pancake and continue to cook for another minute.

7. Place it on a serving plate and continue with the rest of the batter.

8. Layer them one on top of the other.

For the nutella sauce:

1. Add the ingredients in the bowl and heat it in the microwave oven for 30-45 seconds till it is hot enough. 

2.  Once done, mix it well and pour it over your layered pancakes.

We topped ours with some powdered sugar and nuts & seeds mixture (nuts & seeds mixture from Le15 cafe cookbook by @poojadhingra).

Notes:

  1. Alternative for buttermilk: Beat ⅓ cup of plain yogurt and then add 3 tbsp of water to it.
  2. If the batter is too thick, add some more buttermilk.
  3. You can also serve this with whipped cream or vanilla ice cream.
