Tawa Burger

Aren’t burgers simply amazing? A filling or a Pattie with sauces between two buns. So simple to eat and extremely delicious to enjoy. The muse for this recipe is Shalimar, a small place in Hyderabad that has been running for more than 10 years. It is our take on a burger and a tribute to Shalimar. Every bite will leave a bomb of flavors. You will keep digging at it again and again.

Serves 4 burgers

Ingredients : 

For the filling:

1 ½ tbsp Butter 

5- 6 Garlic cloves (finely chopped)

2-3Green Chili  (finely chopped)

1 Capsicum (finelychopped)

2 Onions  (finely chopped)

2 Tomatoes  (finely chopped)

Salt to season

200g Paneer (grated/ mashed)

3- Cheese Cubes / Processed Cheese (as per taste)

2 tbsp Coriander leaves (chopped)

Spice mix:

1 tsp Coriander Powder 

1 tsp Cumin Seeds  Powder

½ tsp Kasoori Methi 

1 tsp Kashmiri Red Chili Powder (heaped)

1 tsp Amchoor Powder  (heaped)

2 tsp Chat Masala  (heaped)

2 tbs Schezwan Chutney 

Pre serving:

2 tsp Butter 

1 tbps leftover Masala paste 

1 tbsp Coriander Leaves 

6 Burger Buns

Method :

For the spice mix:

1. Make a spice paste using all the ingredients mentioned under the spice mix section and a little bit of water.

For the filling: 

1. In a large tawa / kadhai, heat butter and add garlic, green chilli, onions, and capsicum.

2. Season this with salt, and cook until onions start getting golden on a medium heat.

3. Once the onions are golden, add tomatoes to the tawa and cook until it starts to leave oil on the surface. Now add the paneer. 

4. Mash this mixture with a potato masher and cook it  until it comes together.

5. Add in ¾ th of the masala paste (save the rest for pre serving) , and cheese.  Mix this well. 

6. Now add some water to soften the mixture down, and cook well for another 5 min or till it starts to leave oil on the surface. Finally, add some coriander leaves and keep the mixture aside.

To serve

1. Take a burger bun, and slice horizontally, ¾ way through. Fill the prepared veggie mixture, and keep aside.

2. Heat a pan, add butter, a touch of masala paste and a sprinkle of coriander leaves. Warm the burger on all sides. Serve this with some crisps on the side.
